A novel phenolic antioxidant that showed strong antimutagenic activity against eight carcinogenic heterocyclic amines (HCA), produced during cooking processes. Its antimutagenic activity appeared to inhibit both metabolic activation of HCA and action on activated N-Hydroxy species.
